PINEAPPLE CHEESE CAKE

Taste the sweet and sour taste of pineapple in this Pineapple Cheese Cake. The cheese flavours balance the sweet and sour taste by providing a salty slight taste. This will surely complete your lunch or dinner because it is the best dessert.

Preparation Method :

  • Base: Preheat the oven to slow.
  • Roll out the pastry dough. Line a tin and bake "blind" till firm.
  • Filling: Drain the pineapples and reserve the syrup. Reserve two slices of pineapple for the topping. Chop up the rest.
  • Put the cornflour and half the castor sugar in a pan, then gradually blend in the chopped pineapple and syrup. Cook over gentle heat, stirring constantly, till the mixture thickens and clears. Cool.
  • Beat the cheese and the remaining castor sugartill soft. Beat the eggs together, then gradually beat into the cheese. Add the orange juice and essence.
  • Combine this carefully with the pineapple mixture.
  • Fill into the pie shell and bake for 40 to 50 minutes until golden brown.
  • Topping: Put a whole pineapple slice in the centre of the cheesecake. Cut the second slice into quarters and position these around the first like the petals of a flower.

Base

  • ½ quantity shortcrust pastry dough

Filling

  • 1 small can pineapple slices
  • 1 level tablespoon cornflour
  • 120 grams castor sugar
  • 120 grams cream cheese or cheese spread
  • Juice of 1 orange
  • ½ teaspoon orange essence

Topping

  • 2 pineapple slices
