LAYERED POTATO CAKE

Preparation Time :
20 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Grease 22cm spring form tin. Boil, steam or microwave potatoes until tender; drain.
  • Mash potatoes with butter and milk until smooth; divide into 3 equal portions.
  • Stir salami mixture into 1 portion of potato mixture; spread evenly over base of prepared tin.
  • Stir cheese mixture into another portion of potato mixture; spread over salami layer.
  • Combine pesto with remaining portion of potato mixture; spread over cheese layer.
  • Sprinkle with combined cheeses.
  • Place tin on oven tray, bake, uncovered, in moderately hot oven about 35 minutes or until browned.

Salami Mixture:

  • Combine all ingredients in bowl; mix well.

Cheese Mixture:

  • Combine all ingredients in bowl; mix well.

Pesto:

  • Process basil, nuts and garlic until chopped.
  • While motor is operating, add oil in a thin stream, process until combined.
  • Add cheese; process until combined.

 

INGREDIENTS

  • 2 kg potatoes, peeled, chopped
  • 100 grams butter
  • 1 tablespoon milk
  • 25 grams Grated parmesan cheese
  • 25 grams Grated mozzarella cheese

Salami Mixture

  • 50 grams drained chopped sun-dried tomatoes
  • 50 grams spicy salami, chopped
  • 1 tablespoon cream

Cheese Mixture

  • 50 grams Grated tasty cheddar cheese
  • 25 grams Grated parmesan cheese
  • 1 tablespoon cream
  • 1 egg yolk

Pesto

  • 200 grams firmly packed fresh basil leaves
  • 2 tablespoons pine nuts, toasted
  • 1 clove garlic
  • 2 tablespoons Peanut oil
  • 2 tablespoons grated parmesan cheese
