GOURMET CHEESE CAKE

Cinnamon powder and roasted almonds are mixed with cream and cottage cheese for you to enjoy fully flavoured Gourmet Cheese Cake. Don’t forget to taste the sweet Pretzel on top of the cake that will remind you of your exciting childhood food trip.

25 minutes

Cooking Time :
1 hour 30 minutes

Preparation Method :

  • Base: Put the biscuits in a polythene bag and crush into fine crumbs with a rolling pin. Add the butter and mix well. Press the crumb mixture on the base and sides of an 6" springform pan. Refrigerate.
  • Filling: Preheat the oven to moderately slow.
  • Beat the cheese until soft. Combine with the sugar, flour and salt and beat well. Continue to beat while you add the whole egg, then the 2 egg yolks, the sour cream and the lemon juice.
  • Beat the egg whites until soft peaks form. Beat in the extra sugar. Fold into the cheese mixture. Pour into the prepared crumb crust.
  • Bake for 1¼ to 1½ hours. Allow to cool in the oven. Refrigerate until firm.
  • Topping: Decorate with whipped cream, roasted almonds, pretz and sprinkle with cinnamon.

INGREDIENTS

Base

  • 250 grams digestive biscuits
  • 125 grams butter, melted

Filling

  • 375 grams cream cheese or cottage cheese
  • 150 grams powdered sugar
  • 1 tablespoon refined flour
  • A pinch of salt
  • 1 egg, whole
  • 2 eggs, separated 
  • 200 ml sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon powdered sugar, extra

Topping

  • 200 ml cream, whipped cinnamon powder
  • Roasted Almonds 
  • Pretz
