BERRY CHEESECAKE

Preparation Method :

  • For the base:
  • Silver foil an 8" round ring from the sides and keep in the tray.
  • In a bowl, mix the softened butter, cookie crumb  with a wooden spoon or with your hands.
  • Put the cookie crumb mixture in the silver-lined 8" mould and press it with your hands until it is flat.
  • Now, place the mould in the fridge.
  • For the mixture:                                             
  • Preheat the oven at 180°C.
  • In a bowl,place the cream cheese and soften it by stirring slowly with the wooden spoon.
  • Add sugar and lemon juice and mix.
  • Add the beaten eggs, without forming any lumps.
  • Add flour, lemon zest and fold in gently.
  • Pour the mixture in the lined mould and keep in a plain baking tray.
  • Pour 1 litre of water in the tray and bake it for 20-30 minutes at 180°C.
  • Keep the baked cheesecake in the refrigerator and remold it when it is completely chilled.
  • For making the gel:
  • Add the berries and china grass to one litre of water and boil on slow fire and keep it aside.
  • When the cheesecake is completely cold, pour the gel on the top.
  • Garnish with rectangle pieces of white chocolate, strawberries and kiwi.

INGREDIENTS

  • 100 grams Softened butter    
  • 300 grams cookie crumbs       

For the mixture

  • 2 kg Cream cheese   
  • 600 grams Castor sugar          
  • 16 eggs,beaten           
  • 200 grams Flour         
  • 2 Lemon zest  
  • 2 Lemon juice
  • 400 grams Melted butter        

For the Gel topping

  • 50 grams China grass 
  • 200 grams Assorted berries    
  • 1 litre Water
