KIWI SORBET

Preparation Method :

  • Dissolve sugar in water and bring to a boil.
  • Cool at room temperature and then place in refrigerator until chilled.
  • Make a pulp of the kiwi and keep it in the refrigerator till chilled.
  • Mix 3 tablespoons of the chilled sugar syrup with the chilled kiwi pulp and lime juice.
  • Place in a stainless steel or aluminium container/mould in the freezer to set (at least 6-7 hours).
  • Once set, remove from freezer.
  • When half thawed, run it in the blender once again to break up large ice crystals.
  • Adjust the sugar at this point by adding more sugar syrup if needed. Put back in the container/moulds and refreeze for 7 hours.
  • Unmould and serve chilled.

INGREDIENTS

  • 2 kiwi
  • 200 grams sugar
  • 1 tablespoon lime juice
