- Put the water, sugar, and grated lemon rind into a small pan and bring to a boil, stirring constantly.
- Remove from the heat and allow to cool. Stir in the lemon juice, then transfer to a pitcher and cover with plastic wrap. Chill in the refrigerator for about an hour.
- When the lemonade has almost finished chilling, take two glasses and rub the rims with a wedge of lemon, then dip them in sugar to frost. Put the ice cubes into the glasses.
- Remove the lemon syrup from the refrigerator, then pour it over the ice and fill with sparkling water.
- The ratio should be one part lemon syrup to three parts sparkling water. Stir well to mix.
- Decorate with sugar and slices of fresh lemon and serve.

- 100 ml lemon juice
- 6 ice cubes
- 150 ml water
- 75 grams sugar
- 1 teaspoon grated lemon rind
- Sparkling water, to serve
- Granulated sugar and slices of lemon, to decorate
