STIR-FRIED FRENCH BEANS WITH FERMENTED BEAN CURD

Preparation Method :

  • Top and tail the beans. Bring the stock to a boil in a saucepan. Put in the beans, cover, and simmer 15 minutes, or until they are just tender. Drain.
  • Heat the oil in a wok or large frying pan over a high heat. Put in the beans and garlic, and stir-fry 1 minute.
  • Mix in the fermented bean curd and tamari or shoyu sauce. Stir-fry 1 minute more, and remove the pan from the heat.

INGREDIENTS

  • 500 grams French beans
  • 150 ml vegetable stock
  • 4 tablespoons groundnut oil
  • 1 garlic clove, finely chopped
  • 1 tablespoon mashed, fermented bean curd
  • 2 tablespoons tamari or shoyu sauce
