Preparation Method :
- Make the sauce. Heat the sake or sherry in a saucepan over moderate heat until lukewarm. Ignite it, and shake the pan gently until the flame dies. Add half the tamari or shoyu sauce, the kombu stock and dried bonito. Bring to a boil, and then strain through a sieve. Cool completely, and add the remaining tamari or shoyu sauce.
- For the garnish, finely grate the mooli and ginger root separately.
- Cut the bean curd into slices 2 by 1 inch (5 x 2.5 cm) and ¼ -inch (6 mm) thick. Dry with towels.
- Heat a pan of hot oil to 350F/180C. Fry the bean curd pieces, about 6 at a time, until golden. Drain on paper towels.
- Arrange the fried bean curd on four dinner plates, putting a small pile ot mooli and one of grated ginger beside each portion. Serve the sauce separately, if possible, in four tiny bowls.

- 5 teaspoons flaked, dried bonito

- 100 grams mooli (Japanese white radish)
- 30 grams fresh ginger root
