Preparation Method :
- Fry the onions in the heated oil until they are a light yellow colour.
- Add the garlic clove and the chervils with sliced lemon, raisins, white wine, vinegar, bay leaf, sugar, salt and peppercorns to the onions.
- Simmer for about 20-22 minutes.
- Take out the onions and the lemon slices and put them into a bowl. Let the decoction boil down by half.
- Pour the decoction over the onions and lemon slices.
- Let the whole thing cool down, arrange, garnish and serve.
INGREDIENTS
- 750 ml brandy vinegar
- 250 grams gherkins, washed and dried
- 300 grams sugar
- 100 grams pearl onions, peeled
- 2 teaspoon grated horseradish
- 2 each of green, red and yellow peppers, washed and cut into pieces
- 1 small cauliflower, washed, cut into florets
- 2 tablespoon black peppercorns
- 1 piece of ginger, peeled and cut into pieces
- 1 tablespoon mustard seeds
- 2-3 bay leaves
- 1 tablespoon pimento seeds
- 3 cloves
- Salt, to taste
- Herbs for garnishing
