Preparation Method :
- Spice the pork escalopes with salt, pepper and the herbs.
- Lay out the escalopes on the worktop and place a slice of streaky bacon on each one.
- Put one sage leaf onto each slice of bacon.
- Sprinkle with the Parmesan and fold the escalopes together.
- Thread 2 escalopes onto each skewer, baste olive oil and cook for about 5 - 7 minutes on each side.
- Serve the saltimbocca garnished with basil and black olives.
INGREDIENTS
- 750 grams 8 thin escalopes of pork, washed and dried
- 1 teaspoon dried Italian herbs
- 8 slices of streaky bacon
- 8 sage leaves, rinsed and dried
- 50 grams grated Parmesan cheese
- 2 tablespoon olive oil
- Salt and pepper, to taste
- Basil and black olives for garnishing
