GOURMET SKEWER OF KIDNEY

Preparation Method :

  • Rub the kidney pieces in the lemon-pepper seasoning.
  • Wrap each piece of kidney with a slice of bacon, spice with paprika powder and the sage.
  • Alternate the onion quarters with the kidney pieces on the skewer.
  • Sprinkle the skewers with Cognac and grill for about 5-7 minutes on each side.

INGREDIENTS

  • 5-6 veal kidneys, cleaned, cut into halves, tendons removed soaked and dried
  • 150 grams onions, peeled and quartered
  • 12 slices of bacon
  • Paprika powder
  • Lemon-pepper seasoning
  • 1 teaspoon ground sage
  • 2 tablespoon Cognac
