BARBECUED PRAWNS

Preparation Method :

  • Remove the eyes and the legs from the prawns.
  • Heat the oil in a large frying pan and add the white pepper, black pepper, cayenne pepper, herbs and garlic. Add the prawns and toss over heat for a few minutes.
  • Remove the prawns and set them aside.
  • Add the Worcester sauce, stock and wine to the ingredients in the pan. Bring to the boil and cook for about 3 minutes to reduce. Add salt to taste.
  • Arrange the prawns on a bed of rice and pour over the sauce to serve.

INGREDIENTS

  • 500 grams large prawns, cooked and unpeeled
  • 150 grams sesame oil
  • 2 teaspoon each white, black and cayenne pepper
  • Pinch salt
  • 2 teaspoon each chopped fresh thyme, rosemary and marjoram
  • 2 clove garlic, crushed
  • 2 teaspoon Worcester sauce  
  • 150 ml fish stock
  • 6 tablespoons dry white wine
  • Cooked rice
