Preparation Method :
- Spice the turkey breast with salt, pepper and curry powder.
- Mix the spring onions with garlic, fennel, olives and herbs together with the egg and the breadcrumbs.
- Spread the mixture over the turkey breast, leaving a border of 1½ cm. Then roll up the meat and tie it with kitchen twine.
- Put the rolled roast and cook on the grill for about an hour. Turn frequently, baste with the oil several times and sprinkle with the rosemary.
- Rest the roast for a while, then carve into slices and serve.
INGREDIENTS
- 750 grams turkey breast in one whole piece, prepared for a rolled roast, washed and dried
- 150 grams tomatoes, peeled, deseeded and cut into cubes
- 50 ml Sesame oil
- 1 bunch of spring onions, washed and cut into rings
- 2 cloves of garlic, peeled and pressed finely
- 1 fennel, washed, discard the hardcore and cut into strips
- 10-12 black olives, finely chopped
- Curry powder, to taste
- 1 bunch of basil
- 2 sprigs of rosemary, finely chopped
- 1 egg
- 25 grams breadcrumbs
- 1 teaspoon ground rosemary
- Salt and pepper, to taste
