POULTRY MEDALLIONS WITH MANGO DIP

Preparation Method :

  • Mince the chicken with the peeled potatoes.
  • Knead the meat dough with the eggs the salt, pepper, lemon peel, chopped herbs, soy sauce, rice wine and cornflour.
  • Make flat medallions out of the dough and fry them on the grill for 5-7 minutes.
  • Mango Dip: Pour the poultry stock and the cream into a saucepan to make the dip.
  • Add the mango cubes to the poultry stock and cream mixture, till it reduces to half.
  • Put it through a strainer and make a puree.
  • Spice the sauce with the curry powder and the vinegar.
  • Fold in the whipped cream. Garnish the dish with herbs and serve the poultry medallions with the dip.

INGREDIENTS

  • 750 grams turkey breast fillet, washed, pat dry and cut into large pieces
  • 250 ml poultry stock
  • 2 tablespoon chopped herbs
  • 100 grams boiled potatoes, peeled
  • 1½ teaspoon soy sauce
  • 2 teaspoon rice wine
  • 1 teaspoon cornflour
  • 250 grams cream
  • 2 teaspoon curry powder
  • 3 teaspoon vinegar
  • ½ mango, Peeled and cut into large cubes
  • 25 grams whipped cream
  • 3 eggs
  • Zest from ½ lemon
  • Pepper and Salt, to taste
  • Herbs for garnishing
