ROLLED PORK WITH HERBS

Preparation Method :
- Spread the meat pieces out on the worktop. Lay the zucchini slices onto the slices of pork belly.
- Spice the whole thing heavily with salt, pepper and the herbs. Roll up the meat and secure with toothpicks. Grill the rolls until they are brown and crisp.
- The Sauce: Add the chilli strips, the peppercorns with the red pepper and the onion to the vinegar in a bowl.
- Slowly add the oil while constantly stirring. Serve the sauce with the herb belly rolls. Garnish with herbs.
INGREDIENTS
- 8 slices of fresh pork belly, washed and dried
- 1 onion, peeled and diced
- 1 zucchini, washed and cut lengthways into slices
- 1 teaspoon dried Italian herbs
- 50 ml Sesame oil
- 5 teaspoon balsamico vinegar
- ½ red pepper, washed and diced
- 1 small chilli, cleaned and cut it into strips
- ½ teaspoon potted peppercorns
- Salt and pepper, to taste
- Herbs for garnishing
