WILD BOAR MEDALLIONS WITH YELLOW BOLETUS

Preparation Method :
- Spice the medallions with salt, pepper, thyme and tarragon.
- Lay the bacon out on the worktop.
- Place 2 mushroom slices on the centre of each slice of bacon. Place the medallions of wild boar on the mushrooms and then put 2 more slices of mushroom on top.
- Wrap the bacon around the medallions and secure it with toothpicks.
- Fry the medallions on the hot stone for 10 minutes with turning frequently.
- Grill the orange segments on the hot stone for about 5-7 minutes, then put them into a small frying pan, sprinkle and flame with Cognac, serve with the medallions of wild boar.
INGREDIENTS
- 8 slices of streaky bacon
- 500 grams wild boar fillet, washed, dried and cut into medallions
- 1 teaspoon ground thyme
- 150 grams yellow boletus, pat dry and sliced
- 2 oranges, peeled and cut into segments
- 2 tablespoon Cognac
- 1 teaspoon ground tarragon
- Salt and pepper, to taste
