MARINATED LEG OF HARE

Preparation Method :
- Mix the red wine with the vinegar, the bay leaf, the peppercorns, salt and oil. Marinate the hare legs in the mixture for about 10 - 12 hours.
- Spread out 4 large pieces of aluminium foil on the worktop and grease them with oil. Take the hare legs out of the marinade and place them onto the aluminium foil.
- Cover the hare legs with the onions and 2 slices of bacon, 1 sprig of thyme and 1 sprig of marjoram on each. Close the aluminium foil tightly.
- Cook the foil packages in the embers for about half an hour. Open the packages, arrange the hare legs on the plates and serve.
INGREDIENTS
- 1½ kg hare legs, washed and dried
- 350 ml red wine
- 50 ml vinegar
- 1 bay leaf
- 2 tablespoon Sesame oil
- 2 onions, peeled and sliced
- 8 slices of streaky bacon
- Sesame oil for the aluminium foil
- 4 sprigs of thyme and marjoram
- 5-6 peppercorns
- Salt, to taste
