MARINATED LEG OF HARE

Preparation Method :

  • Mix the red wine with the vinegar, the bay leaf, the peppercorns, salt and oil. Marinate the hare legs in the mixture for about 10 - 12 hours.
  • Spread out 4 large pieces of aluminium foil on the worktop and grease them with oil. Take the hare legs out of the marinade and place them onto the aluminium foil.
  • Cover the hare legs with the onions and 2 slices of bacon, 1 sprig of thyme and 1 sprig of marjoram on each. Close the aluminium foil tightly.
  • Cook the foil packages in the embers for about half an hour. Open the packages, arrange the hare legs on the plates and serve.

INGREDIENTS

  • 1½ kg hare legs, washed and dried
  • 350 ml red wine
  • 50 ml vinegar
  • 1 bay leaf
  • 2 tablespoon Sesame oil
  • 2 onions, peeled and sliced
  • 8 slices of streaky bacon
  • Sesame oil for the aluminium foil
  • 4 sprigs of thyme and marjoram
  • 5-6 peppercorns
  • Salt, to taste
