MARINATED CALF'S LIVER

Preparation Method :

  • Marinate the strips of liver in the sherry, the soy sauce and the curry powder for about an hour.
  • Place the mandarins onto a strainer and shake off the excess liquid.
  • Remove the strips of liver from the marinade and shake off the excess liquid.
  • Then fry on the hot stone for about 5-7 minutes turning frequently.
  • Put the lemon and pieces of mandarin together with the spring onions onto the hot stone and fry for about 5 minutes.
  • Salt the strips of liver, garnish with sage, the fruit and spring onions.

INGREDIENTS

  • 1 bundle of spring onions, cleaned, chopped off about one third of the green part and then cut the remainder into quarters
  • 50 ml soy sauce
  • 550 grams calf's liver, washed, dried and cut into thick slices
  • 2 tablespoon curry powder
  • 50 ml sherry
  • 1 lemon, peeled, discard all bits of the white skin and separate into wedges
  • 1 small can of mandarins
  • Salt, to taste
  • Sage for garnishing
