TOASTED TROPICAL FRUIT KEBABS

Preparation Method :

  • Soak the wooden skewers in hand- hot water for 30 minutes.
  • Put all the ingredients for the chocolate dip into a saucepan.
  • Heat, stirring constantly, until thickened and smooth. Keep warm at the edge of the barbecue.
  • Slice the mango on each side of its large, flat stone (pit). Cut the flesh into chunks, removing the peel.
  • Halve, deseed and peel the paw-paw (papaya) and cut it into chunks.
  • Peel the kiwi fruit and slice into chunks.
  • Peel and cut the pineapple into chunks. Peel and slice the banana and dip the pieces in the lemon juice.
  • Thread the pieces of fruit alternately on to the wooden skewers.
  • Place them in a shallow dish and pour over the rum. Leave to soak up the flavor of the rum until ready to barbecue, at least 30 minutes.
  • Spear some chunks of exotic tropical fruits on to kebab sticks, sear them over the barbecue and serve with this amazing chocolate dip.
  • Cook the kebabs over the hot coals, turning frequently, until seared, about 2 minutes.
  • Serve, accompanied by the hot chocolate dip.

INGREDIENTS

  • 4 wooden skewers

Dip

  • 125 gram squares plain (dark) chocolate, broken into pieces
  • 2 tablespoon golden (light corn) syrup
  • 1 tablespoon cocoa powder
  • 1 tablespoon corn flour (cornstarch)
  • 200 ml milk

Kebabs

  • 1 mango
  • 1 paw-paw (papaya)
  • 2 kiwi fruit
  • ½ small pineapples
  • 1 large banana
  • 2 tablespoon lemon juice
  • 150 ml white rum
