HERRINGS WRAPPED IN LETTUCE

Preparation Method :

  • Spice the herrings with salt and pepper on the inside and the outside and sprinkle them with lemon juice. Stuff the parsley into the belly.
  • Blanch the lettuce leaves in boiling water, take them out immediately and dry them well.
  • Put 2 leaves one on top of the other onto the worktop. Wrap the herrings in the lettuce leaves.
  • Grease 4 sufficiently large pieces of aluminium foil with oil and put the herrings onto them.
  • Fold up the sides of the aluminium foil, pour 1-1½ tablespoon of wine over each herring and close the aluminium foil tightly.
  • Put the packages into the embers and cook the fish there for about 12-15 minutes. After cooking, take them out of the fire, arrange in the lettuce leaves, garnish and serve hot.

INGREDIENTS

  • 4-5 ready to cook herrings, washed and dried
  • 100 ml white wine
  • 25 grams chopped parsley
  • Lemon juice
  • 8 - 10 large lettuce leaves
  • Sesame oil for greasing
  • Pepper and salt, to taste
