BBQ PIRI PIRI CHICKEN

Preparation Method :

  • Marinade Combine the oil, lemon juice, chillis, garlic, ginger, paprika, and salt in a small saucepan over medium heat and bring to a boil.
  • Simmer for 2 minutes. Let cool, then pour into a food processor and blend until smooth. Transfer to a large bowl with the parsley.
  • Chicken Put the chicken breast-side down on a clean chopping board. Remove the backbone using a sharp knife or kitchen scissors.
  • Wash under cold running water. Splay the chicken out flat. Insert two metal skewers through the chicken beginning at the thickest part of the breast all the way through to the thighs.
  • This will ensure the chicken stays splayed. Score the chicken in the thickest part of the legs, to help it to cook more evenly. Coat the chicken in the marinade, cover, and refrigerate for at least 4 hours or overnight.
  • Preheat a barbecue grill on medium heat. Cook the chicken until the juices run clear from the thickest part of the thigh, 20 minutes.
  • Baste with marinade during cooking to keep it moist. Remove the skewers and serve hot with the salad and lemon wedges.

INGREDIENTS

Marinade

  • 150 ml sesame oil
  • 100 ml freshly squeezed lemon juice
  • 8 small red chillis
  • 5 cloves garlic, coarsely chopped
  • 2 tablespoon coarsely chopped fresh ginger
  • 2 teaspoon sweet paprika
  • 2 teaspoon salt
  • 6 tablespoons finely chopped fresh parsley

Chicken

  • 2 kg chicken
  • Mixed salad greens, to serve
  • Lemon wedges, to serve
