BBQ CHICKEN WITH SPICY MEXICAN SALSA

Preparation Method :

  • Chicken Score the drumsticks with a sharp knife. Combine the oil, garlic, paprika, cumin, and chilli powder in a bowl.
  • Add the chicken and turn to coat. Season with salt and pepper. Cover and marinate overnight in the refrigerator.
  • Salsa Combine the corn, oil, tomato, avocado, onion, cilantro, chilli, lime juice, salt, and pepper in a bowl.
  • Preheat a grill pan or barbecue on high heat. Grill the drumsticks until browned and cooked through, 15 minutes. Serve hot with the salsa and sour cream.

INGREDIENTS

Chicken

  • 10 chicken drumsticks
  • 4 tablespoons sesame oil
  • 2 clove garlic, finely chopped
  • 2 tablespoon sweet paprika
  • 4 teaspoons ground cumin
  • 2 teaspoon chilli powder
  • Salt and freshly ground black pepper
  • Sour cream to serve

Salsa

  • 500 grams corn (sweetcorn)
  • 4 teaspoons sesame oil
  • 2 large tomato, diced
  • 2 avocado, pitted and diced
  • 1 small red onion, diced
  • 50 grams fresh cilantro(coriander) leaves
  • 2 red chilli, finely chopped
  • 4 tablespoons freshly squeezed lime juice
