MELTING CHEESE & ONION BAGUETTES

Preparation Method :

  • Split the part-baked baguettes in half lengthways, without cutting right through. Spread a little tomato relish on each split baguette.
  • Melt the butter in a frying pan (skillet) and add the spring onions (scallions). Fry them gently until softened and golden. Remove from the heat and leave to cool slightly.
  • Beat the cream cheese in a mixing bowl to soften it. Mix in the spring onions (scallions), with any remaining butter. Add the grated cheese and snipped chives, and mix well. Season.
  • Divide the cheese mixture between the baguettes, spread it over the cut surfaces and sandwich together. Wrap each baguette tightly in foil.
  • Part-baked baguettes are split and filled with a tasty cheese and onion mixture, then wrapped in foil and cooked over the barbecue to make them warm, crisp and delicious.
  • Heat the baguettes over the barbecue for about 10-15 minutes, turning them occasionally. Peel back the foil to check that they are cooked and the cheese mixture has melted.
  • Serve with salad leaves (greens) and garnished with fresh herbs.

INGREDIENTS

  • 4 part-baked baguettes
  • 2 tablespoon tomato relish 
  • 60 gram butter
  • 5 spring onions (scallions), trimmed and chopped finely
  • 125 gram cream cheese 
  • 125 gram Cheddar cheese, grated 
  • 1 teaspoon snipped fresh chives
  • Pepper

To serve

  • Mixed salad leaves (greens)
  • Fresh herbs
