GRILLED CYPRIOT CHEESE

Preparation Method :

Slice the cheese quite thickly and place it in a shallow dish.
Pour the marinade over the cheese. Cover and chill for at least 10 minutes.
To make the salad, slice the tomatoes and arrange them on a serving plate. Slice the onion thinly and scatter over the tomatoes.
Whisk together the olive oil, vinegar, lemon juice, ground coriander and fresh coriander (cilantro).
Season to taste with salt and pepper, then drizzle the dressing over the tomatoes and onions. Cover and chill.
Drain the marinade from the haloumi cheese. Cook the cheese over hot coals for 2 minutes, turning once. Lift on to plates and serve with the salad.

500 gram Haloumi cheese quantity Orange, ('hive & Marjoram Marinade

Salad

250 gram plum tomatoes
1 small red onion
4 tablespoon olive oil
2 tablespoon cider vinegar
1 teaspoon lemon juice
Pinch of ground coriander
2 teaspoon chopped fresh coriander (cilantro)
Salt and pepper
Fresh basil leaves to garnish
