GOAT'S CHEESE WITH WALNUTS IN WARM OIL

Preparation Method :
- To make the dressing, whisk together the walnut oil, wine vinegar, honey, mustard and ginger in a small saucepan. Season to taste.
- Heat the dressing on the hob (stove top) or over the barbecue, stirring occasionally, until warm.
- Add the walnut halves to the warm dressing and continue to heat for 3-4 minutes.
- Arrange the salad leaves on serving plates and place spoonfuls of goat's cheese on top.
- Lift the walnut halves from the dressing with a perforated spoon, and scatter them over the salads.
- Transfer the warm dressing to a small jug, for sprinkling over the salads.
- Sprinkle chives over the salads and serve them, accompanied by the warm walnut oil dressing.

- 100 gram walnut halves
- Mixed salad leaves (greens)
- 150 gram soft goat's cheese
- Snipped fresh chives to garnish
Dressing
- 6 tablespoon walnut oil
- 3 tablespoon white wine vinegar
- 1 tablespoon clear honey
- 1 teaspoon Dijon mustard
- Pinch of ground ginger
- Salt and pepper
