ALMONDS WITH SOFT CHEESE

Preparation Method :

  • Beat the cream cheese in a large bowl to soften it.
  • Add the ground almonds and chopped dates, and mix together thoroughly. Season with salt and pepper.
  • Melt the butter in a small frying pan (skillet). Add the flaked (slivered) almonds and fry them gently for 2-3 minutes until golden brown.
  • Remove from the heat and leave to cool for a few minutes.
  • Mix the fried nuts with the cream cheese mixture, stirring well to combine thoroughly.
  • Soak the vine (grape) leaves in water to remove some of the saltiness, if specified on the packet. Drain them, lay them out on a work surface (counter) and spoon an equal amount of the cream cheese mixture on to each one. Fold over the leaves to enclose the filling.
  • Wrap the vine (grape) leaf parcels in foil.1 or 2 per foil package. Place over the barbecue to heal through for about 8-10 minutes, turning once.
  • Serve with barbecued baby corn and garnish with sprigs of rosemary and tomato wedges.

  • 300gram cream cheese
  • 60 gram ground almonds
  • 30 gram dates, stoned (pitted) and chopped
  • 60 gram butter
  • 30 gram flaked (slivered) almonds
  • 12-16 vine leaves
  • Salt and pepper

To Garnish

  • Sprigs of rosemary
  • Tomato wedges
