CHOCOLATE BRANDY WAFERS

Makes :
20 Pieces

Preparation Time :
30 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Combine butter, golden syrup and sugar in small pan, stir over heat until butter is melted. Stir in sifted flour and nuts.
  • Place ½ level teaspoons of mixture on greased oven trays. Bake in moderate oven about 5 minutes or until lightly browned.
  • Remove from oven; cool on tray 1 minute. Lift wafers from trays, cool on wire racks.
  • Spread tops of half the wafers with combined chocolate and oil. Place wafers, chocolate side up on trays; stand until set.
  • Place chocolate brandy cream into piping bag fitted with small fluted tube, pipe cream mixture onto plain wafers; top with chocolate coated wafers.
  • Chocolate Brandy Cream: Place cream in small pan, stir over heat until hot. Remove cream from heat, quickly stir in chocolate, then brandy; refrigerate 10 minutes.
  • Beat butter and chocolate mixture in small bowl until light and fluffy.

INGREDIENTS

  • 2 tablespoons ground almonds
  • 150 grams dark chocolate, melted 
  • 3 tablespoon butter
  • 2 tablespoons golden syrup
  • 2 tablespoons brown sugar
  • 2 tablespoons plain flour
  • 1 teaspoon cooking oil

Chocolate Brandy Cream

  • 1 tablespoon brandy
  • 3 tablespoon butter
  • 75 ml cream
  • 150 grams dark chocolate, melted
