Preparation Method :
- Cheese Filling : Grate paneer. Mix everything to make a paste of spreading consistency. Add some yellow colour. Keep filling aside.
- Tomato Filling : Cook puree in a small pan till thick. Add tomato sauce, salt and pepper. Cook for a minute. Keep red filling aside.
- Mint Chutney : Grind all ingredients to a fine paste with some water.
- Arrange 3 slices bread joining each other in a serving dish.
- Spread cheese filling on each slice. Cover the cheese filling with the 3 more buttered slices.
- Spread green chutney generously and cover with another 3 buttered slices.
- Spread red filling over the slice layer and cover with 3 more buttered slices of bread.
- Cover this loaf with beaten curd.
- Dip small coriander leaves in cold water for 5 - 10 minutes and arrange 2 rows of coriander leaves on both sides.
- In the centre, place cherry or grape halves.
- Cut a tomato slice into four pieces, arrange on each corner.
- Refrigerate for atleast an hour, before serving cut into slices.
INGREDIENTS
Covering
- 250 grams thick curd prepared from full cream milk, Hang curd for about an hour
- Mix 5 grams of powdered sugar with salt and pepper
Cheese Filling
- 1 tablespoon milk
- 50 grams paneer
- 2 tablespoon finely grated cucumber or carrot
- Salt, pepper to taste
- Few drops of yellow colour
Tomato Filling
- 2 tomatoes - pureed in a grinder
- 2 tablespoon tomato sauce
- ½ teaspoon salt
- ½ teaspoon pepper
Mint Chutney
- 1 green chilli
- 1 onion - sliced
- 1 teaspoon sugar
- 50 grams mint leaves
- 75 grams fresh coriander leaves
- Salt and amchur to taste
Other Ingredients
- 12 slices of fresh bread, sides discarded
- Butter - enough to spread
- Fresh coriander leaves and few black grapes for garnishing
