Preparation Method :
- Toast the bread on both sides, and then butter one side of each slice.
- On the first buttered side, place some lettuce, cheese, tomato and bacon and a little freshly ground pepper.
- Place second slice of toast on top, buttered side down, spread with mayonnaise and arrange more lettuce and chicken on top.
- Season with salt and pepper, then top with third slice of toast, buttered side down. Cut in two to serve. Repeat to make another sandwich.
- If like, garnish with stuffed olives.

- 12 thick slices white bread butter for spreading crisp lettuce leaves
- 8 slices Gruyere cheese
- Tomato slices
- 4 rashers back bacon, grilled
- Salt and freshly ground pepper
- 4 tablespoons mayonnaise
- 12 slices cooked chicken
