- Place the bread on a serving plate and spread with the mayonnaise dressing. Top with the shredded lettuce leaves.
- Mix together the cottage cheese, cucumber and spring onions in a small bowl.
- Pile this mixture on to the lettuce and season.

- 150 grams plain diet cottage cheese
- 1 medium slice of wholemeal bread
- 1 teaspoon Heinz mayonnaise-style dressing
- Lettuce leaves, shredded
- 1 inch piece of cucumber, skinned and diced
- 3 spring onions, finely chopped
- Freshly ground black pepper
