VEGETARIAN SAUSAGES

Preparation Method :

  • Heat the corn oil in a pan. Add the onion, mushrooms with bell pepper and cook until softened.
  • Mash the cannellini beans in a large bowl. Add the bell pepper mixture and the breadcrumbs, cheese, herbs and egg yolk, mix well.
  • Press the mixture together and shape into equal size sausages. Roll each sausage in the seasoned flour. Chill in the refrigerator at least for 20 - 30 minutes.
  • Preheat the barbecue. Cook the sausages on a sheet of oiled aluminum foil set over medium-hot coals for 15 minutes, turn and baste frequently with oil, until golden.
  • Split the bread rolls down the center and insert a layer of cooked onions. Place the sausages in the rolls and serve with tomato chutney.

INGREDIENTS

  • 450 grams canned cannellini beans, rinsed and drained
  • 150 grams fresh breadcrumbs
  • 150 grams grated Cheddar cheese
  • 1 teaspoon dried mixed herbs
  • 2 tablespoon cooking oil
  • 2½ tablespoon Seasoned all-purpose flour
  • 25 grams onion, finely chopped
  • 50 grams mushrooms, finely chopped
  • ½ red bell pepper, seeded and finely chopped
  • 1 egg yolk
  • Small bread rolls and tomato chutney, to serve
