CORN FOOTLONG

Preparation Method :

  • Mix all ingredients given under flavoured butter and beat well to soften the butter.
  • Cut the French loaf horizontally to get 2 long pieces.
  • Butter one piece with the flavoured butter. Spread some mustard paste on the buttered footlong and keep aside.
  • Preheat the oven to 180°C / 350°F.
  • Topping: Heat 1 tablespoon butter in a pan or wok. Add onion and fry till soft. Add corn, salt and pepper. Stir well to mix. Remove from heat.
  • Add capsicum and cheese spread to the hot mixture.
  • Spread corn filling on the buttered foot long.
  • Grate mozzarella cheese over it and sprinkle some oregano.
  • While serving, grill for about 10 minutes or until cheese melts and the bread turns crisp. Cut into thick slices.
  • Repeat with the other piece of the loaf.

INGREDIENTS

  • 1 French loaf - cut into half horizontally
  • 2 teaspoon mustard paste

Flavoured Butter(Mix Together)

  • 75 grams softened butter
  • 2 tablespoon finely chopped coriander
  • 1 teaspoon black peppercorns - crushed
  • 3 flakes garlic - chopped and crushed

Topping

  • 250 grams cooked corn kernel
  • 60 grams mozzarella cheese - grated
  • 1 teaspoon oregano or red chili flakes
  • 1 capsicum - finely chopped
  • 1 tablespoon butter
  • 2 tablespoon cheese spread
  • 1 large onion - finely chopped
  • Salt, pepper to taste
