CHILLI CHICKEN FOOTLONGS

Preparation Method :

  • Chilli Chicken Topping: Marinate the chicken with chilli paste, soya sauce, salt, pepper and ajinomoto in a bowl for 20 - 30 minutes. Drain the extra marinade from chicken pieces
  • Heat oil in a pan, when hot add in the chicken and sprinkle the flour and fry on medium heat till crisp and light brown.
  • Cut the French loaf horizontally into half. Slightly butter the top and the sides and place on a baking tray.
  • Heat oven to 200°C and grill or bake for 5 minutes till slightly crisp. Remove tray from the oven. Keep the oven hot.
  • Mix the fried chicken pieces, capsicum and onions in only 1 tablespoon tomato spread and keep it aside.
  • Tomato Spread: Heat oil and add in the garlic with chilli paste, tomato puree, sauce, salt and pepper. Simmer for about 3 minutes. Finally add in the oregano and remove from heat.
  • Assemble: Spread some tomato spread on the grilled tray. Sprinkle cheese on the tomato spread. Spread the chilli chicken, chopped capsicum and onions.
  • Place the tray back in the oven and grill till the cheese melts. Serve hot on a bed of lettuce with chilli flakes and mustard sauce.

INGREDIENTS

  • 150 grams boneless chicken breast - cut into tiny pieces 
  • 1 loaf long French bread, some butter to spread 
  • 100 grams pizza cheese - grated
  • 4 flakes garlic - crushed and chopped finely
  • 1½ teaspoon red chilli paste 
  • 150 grams ready made tomato puree
  • 2 tablespoon tomato sauce 
  • 1 teaspoon oregano 
  • Salt and pepper to taste
  • 2 tablespoon Cooking oil
  • 1 teaspoon soya sauce 
  • Pinch of aji no moto 
  • Salt and pepper
  • 2 tablespoon cornflour
  • Cooking oil for frying
  • 1 small onion - chopped
  • 1 small capsicum - chopped
