Preparation Method :
- Beat butter, essence, sugar and yolk in small bowl until smooth. Stir in sifted dry ingredients and cream.
- Roll rounded teaspoons of mixture into balls, place on greased oven trays, flatten with fork.
- Bake in hot oven about 8 - 10 minutes or until lightly browned. Cool on wire racks.
- Dip tops of biscuits into citrus icing; leave to set on wire racks.
- Citrus Icing: Sift icing sugar into small heatproof bowl. Stir in rind, lemon juice and enough orange juice to make a stiff paste. Stir over hot water until spreadable.

- 150 grams icing sugar mixture
- 1 tablespoon lemon juice
- 1 tablespoon orange juice
- ½ teaspoon grated orange rind
