RASPBERRY COCONUT SLICE

45 minutes

Preparation Method :

  • Topping: Combine all ingredients in medium mixing bowl.
  • Beat butter, sugar and egg in small bowl until combined, stir in sifted flours.
  • Spread mixture over base of greased rectangular slice pan, bake in moderate oven 10 minutes.
  • Spread the hot base with jam; then topping. Bake in moderate oven further 30 - 35 minutes or until browned. Cool in pan.

INGREDIENTS

  • 100 grams butter
  • 100 grams castor sugar
  • 50 grams self-raising flour
  • 100 grams plain flour
  • 125 grams raspberry jam
  • 1 egg

Topping

  • 2 eggs, lightly beaten
  • 75 grams castor sugar
  • 150 grams shredded coconut
