LEMON PISTACHIO SLICE

45 minutes

Preparation Method :

  • Filling: Beat butter, rind and sugar in small bowl until smooth, add eggs 1 at a time, beat until combined. Mixture will curdle at this stage. Stir in remaining ingredients.
  • Lemon Icing: Sift sugar into small heatproof bowl, stir in butter and enough juice to make a stiff paste. Stir over hot water until spreadable.
  • Sift the flour into medium bowl, stir in sugar, rub in with butter and add yolks with essence; mix to a firm dough.
  • Press dough over base of greased rectangular slice pan, prick lightly with fork.
  • Bake in moderate oven for about 10 - 15 minutes. Pour filling over hot base, bake in moderate oven further 30 minutes or until filling is set.
  • Allow to stand for about 10 minutes, spread with lemon icing, sprinkle with nuts; cool in pan.

INGREDIENTS

  • 100 grams butter, chopped
  • 75 grams chopped pistachios
  • 250 grams plain flour
  • 2 tablespoons caster sugar
  • 2 egg yolks
  • 1 teaspoon vanilla essence

Filling

  • 100 grams castor sugar
  • 50 grams butter
  • 1 teaspoon grated lemon rind
  • 3 eggs
  • 50 ml lemon juice
  • 1 tablespoon plain flour
  • 75 grams shredded coconut

Lemon Icing

  • 250 grams icing sugar mixture
  • 1 teaspoon soft butter
  • 1 tablespoon lemon juice
