Preparation Method :
- Filling: Beat egg in small bowl with electric mixer until pale and thick, beat in sugar and butter. Stir in coconut and cream.
- Beat butter and sugar in small bowl with electric mixer until smooth, add egg, beat until combined. Stir in sifted flours.
- Press mixture over base of greased rectangular slice pan, prick lightly with fork.
- Spread with lemon butter, then filling. Bake in moderate oven about 20 - 30 minutes or until lightly browned.
- Cool in pan. Cut into pieces, dust with sifted icing sugar.

- 2 tablespoons self-raising flour

- 1 egg
