Preparation Method :
- Grease 2 baking sheets. Sift the flour, bicarbonate of soda, ground ginger and caster sugar into a bowl.
- Melt the butter with the golden syrup and stir into the sifted mixture with the chopped stem ginger.
- Break off walnut-sized pieces of cookie dough with wetted hands and roll into balls.
- Place the balls slightly apart on the baking sheets and flatten lightly. Arrange a flaked almond on top of each one.
- Bake the cookies in a preheated oven, 190°C / 375°F / Gas Mark 5, for 12-15 minutes.
- Leave to cool slightly on the baking sheets then transfer to a wire rack to cool completely.

- 100 grams self-raising flour
- 5 tablespoon golden syrup
- 1 tablespoon chopped stem ginger in syrup
- ½ teaspoon bicarbonate of soda
- 2 teaspoons ground ginger
- 2 teaspoon castor sugar
- 50 grams butter
- About 22-24 flaked almonds
