GINGER COOKIES

Preparation Method :

  • Grease 2 baking sheets. Sift the flour, bicarbonate of soda, ground ginger and caster sugar into a bowl.
  • Melt the butter with the golden syrup and stir into the sifted mixture with the chopped stem ginger.
  • Break off walnut-sized pieces of cookie dough with wetted hands and roll into balls.
  • Place the balls slightly apart on the baking sheets and flatten lightly. Arrange a flaked almond on top of each one.
  • Bake the cookies in a preheated oven, 190°C / 375°F / Gas Mark 5, for 12-15 minutes.
  • Leave to cool slightly on the baking sheets then transfer to a wire rack to cool completely.

INGREDIENTS

  • 100 grams self-raising flour
  • 5 tablespoon golden syrup
  • 1 tablespoon chopped stem ginger in syrup
  • ½ teaspoon bicarbonate of soda
  • 2 teaspoons ground ginger
  • 2 teaspoon castor sugar
  • 50 grams butter
  • About 22-24 flaked almonds
