Preparation Method :
- Lemon Icing: Sift icing sugar into small heatproof bowl, stir in butter, rind and enough juice, to mix to a stiff paste. Stir over hot water until spreadable.
- Combine butter and golden syrup in medium pan, stir over heat until butter is melted; stand until warm.
- Stir in sifted dry ingredients, sugar, coconut and egg. Press mixture over base of greased rectangular slice pan.
- Bake in moderate oven about 30 minutes or until lightly browned and firm. Cool in pan.
- Spread with lemon icing, leave to stand.

- 2 teaspoons ground ginger
- 100 grams castor sugar
- 75 grams coconut
- 1 egg, lightly beaten

- 1 teaspoon grated lemon rind
- 1 tablespoon lemon juice
