GINGER COCONUT SLICE

Preparation Method :

  • Lemon Icing: Sift icing sugar into small heatproof bowl, stir in butter, rind and enough juice, to mix to a stiff paste. Stir over hot water until spreadable.
  • Combine butter and golden syrup in medium pan, stir over heat until butter is melted; stand until warm.
  • Stir in sifted dry ingredients, sugar, coconut and egg. Press mixture over base of greased rectangular slice pan.
  • Bake in moderate oven about 30 minutes or until lightly browned and firm. Cool in pan.
  • Spread with lemon icing, leave to stand.

INGREDIENTS

  • 50 grams butter, chopped
  • 1 tablespoon golden syrup
  • 150 grams self-raising flour
  • 2 teaspoons ground ginger
  • 100 grams castor sugar
  • 75 grams coconut
  • 1 egg, lightly beaten

Lemon Icing

  • 250 grams icing sugar mixture
  • 3 tablespoon soft butter
  • 1 teaspoon grated lemon rind
  • 1 tablespoon lemon juice
