CRUNCHY PEANUT COOKIES

Preparation Method :

  • Sift the flour, baking soda and cinnamon into medium bowl, stir in sugar, oats, coconut and rind; with peanut butter, golden syrup and enough water to a soft dough.
  • Knead gently on lightly floured surface until smooth, cover and refrigerate for about 20 - 30 minutes.
  • Divide dough in half, roll each half between sheets of baking paper; cut into small rounds using cookie cutter, place on greased oven trays.
  • Bake in moderate oven about 10 minutes or until lightly browned. Cool on wire racks.

INGREDIENTS

  • 75 grams crunchy peanut butter
  • 150 grams castor sugar
  • 100 grams self-raising flour
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 50 grams rolled oats
  • 25 grams shredded coconut
  • 1 teaspoon grated lemon rind
  • 1 tablespoon golden syrup
  • 2 tablespoons water
