Preparation Method :
- Sift the flour, baking soda and cinnamon into medium bowl, stir in sugar, oats, coconut and rind; with peanut butter, golden syrup and enough water to a soft dough.
- Knead gently on lightly floured surface until smooth, cover and refrigerate for about 20 - 30 minutes.
- Divide dough in half, roll each half between sheets of baking paper; cut into small rounds using cookie cutter, place on greased oven trays.
- Bake in moderate oven about 10 minutes or until lightly browned. Cool on wire racks.

- 75 grams crunchy peanut butter
- 150 grams castor sugar
- 100 grams self-raising flour
- ¼ teaspoon baking soda
- ½ teaspoon ground cinnamon
- 50 grams rolled oats
- 25 grams shredded coconut
- 1 teaspoon grated lemon rind
- 1 tablespoon golden syrup
- 2 tablespoons water
