- Prepare the pastry: In a small saucepan, combine the water, milk, butter, sugar, and salt, and bring to a boil over medium heat.
- Add the flour and cook over low heat while stirring. When mixture forms a ball of dough, remove from the heat.
- Transfer the dough to a bowl. Mix with an electric mixer on low speed for 3 minutes to cool the dough.
- While mixing, add the eggs to the dough one at a time. Be sure that each egg is mixed into the dough before adding the next one.
- Cover the dough with plastic wrap and refrigerate for 30 minutes. (You may store the dough in the refrigerator for up to 24 hours.)
- Prepare the filling: In a small saucepan, combine the milk, coffee, and ¼ cup of sugar, and bring to a boil over low heat.
- Beat the egg yolks, remaining sugar, and corn flour in a bowl until smooth.
- When the milk boils, lower the heat. Whisk the egg yolk mixture into the milk and continue to whisk. When small bubbles form and the mixture has thickened to the consistency of pudding, remove from the heat.
- Transfer the filling to an airtight container and cover. Let cool to room temperature and then refrigerate until completely cool. (You may store the cream for up to 2 days in the refrigerator.)
- Assemble the éclairs: Preheat the oven to 375°F.
- Fill the pastry bag with the pastry dough and pipe out 3-inchTong strips ½ inch apart onto the greased baking sheet.
- Brush with the beaten egg and bake for 25 minutes, or until they are golden brown.
- Let the éclairs cool on a metal cooling rack.
- Stir the cream filling until smooth and spoon into the (clean) pastry bag.
- Take one éclair in your hand bottom-side up. Insert the tip of the pastry bag into the éclair and pipe in the cream until the éclair feels heavy. Fill the remaining éclairs.
- Melt the chocolate in a double boiler or in a bowl set on top of a pan of boiling water. Remove the chocolate from the heat and add the sweet cream and butter. Mix well.
- Carefully dip the top of the éclairs into the melted chocolate.
- Place the dipped éclairs on a tray covered with baking paper and refrigerate for 30 minutes.
- Serve immediately or store for up to 2 days in the refrigerator.

- 1 tablespoon butter
