APRICOT NUT SLICE

Preparation Method :

  • Topping: Combine all ingredients in bowl; mix well.
  • Sift flour and sugar into medium bowl, rub in butter. Add egg yolk; mix to a firm dough.
  • Press dough over base of greased rectangular slice pan. Bake in moderate oven 10 minutes, gently spread with jam; spread with topping.
  • Bake in moderate oven further 20 minutes or until topping is set. Cool in pan.

INGREDIENTS

  • 100 grams plain flour
  • 25 grams self-raising flour
  • 1 tablespoon caster sugar
  • 100 grams butter
  • 1 egg yolk

Topping

  • 75 grams apricot jam
  • 1 egg white
  • 75 grams castor sugar
  • 2 teaspoons cocoa
  • 25 grams desiccated coconut
  • 150 grams unsalted roasted peanuts
