Preparation Method :
- Topping: Combine all ingredients in bowl; mix well.
- Sift flour and sugar into medium bowl, rub in butter. Add egg yolk; mix to a firm dough.
- Press dough over base of greased rectangular slice pan. Bake in moderate oven 10 minutes, gently spread with jam; spread with topping.
- Bake in moderate oven further 20 minutes or until topping is set. Cool in pan.
INGREDIENTS
- 100 grams plain flour
- 25 grams self-raising flour
- 1 tablespoon caster sugar
- 100 grams butter
- 1 egg yolk
Topping
- 75 grams apricot jam
- 1 egg white
- 75 grams castor sugar
- 2 teaspoons cocoa
- 25 grams desiccated coconut
- 150 grams unsalted roasted peanuts
