Preparation Method :
- Filling : Combine apricots and water in pan, simmer, covered, about 8 - 10 minutes or until apricots are soft and liquid absorbed; blend or process until smooth.
- Topping : Beat egg whites in small bowl until soft peaks form. Gradually add in the sugar; beat for about 5 minutes. Sugar should not dissolve.
- Beat butter and sugar in small bowl until smooth. Stir in sifted flour and enough water to mix to a firm dough.
- Press dough over base of greased rectangular slice pan. Bake in moderate oven 15 minutes, spread with hot filling, then topping and almonds.
- Bake in moderate oven for further 20 minutes or until lightly browned. Cool in pan.

- 100 grams butter
- 50 grams raw sugar
- 50 grams flaked almonds
- 125 grams dried apricots
- 100 ml water
- 2 egg whites
