APRICOT ALMOND SLICE

Preparation Time :
40 minutes

Cooking Time :
45 minutes

Preparation Method :

  • Filling : Combine apricots and water in pan, simmer, covered, about 8 - 10 minutes or until apricots are soft and liquid absorbed; blend or process until smooth.
  • Topping : Beat egg whites in small bowl until soft peaks form. Gradually add in the sugar; beat for about 5 minutes. Sugar should not dissolve.
  • Beat butter and sugar in small bowl until smooth. Stir in sifted flour and enough water to mix to a firm dough.
  • Press dough over base of greased rectangular slice pan. Bake in moderate oven 15 minutes, spread with hot filling, then topping and almonds.
  • Bake in moderate oven for further 20 minutes or until lightly browned. Cool in pan.

  • 150 grams raw sugar
  • 150 grams wholemeal plain flour
  • 100 grams butter
  • 50 grams raw sugar
  • 50 grams flaked almonds
  • 125 grams dried apricots
  • 100 ml water
  • 2 egg whites
