Preparation Method :
- Filling: Beat yolks and sugar in small bowl with electric mixer until thick and creamy.
- Beat in the juice and honey. Stir in butter, almonds and crumbs.
- Beat egg whites in a small bowl until soft peaks form. Fold egg whites into almond mixture.
- Topping: Combine butter and sugar in medium pan, stir over heat, without boiling, until sugar is dissolved.
- Bring to boil, simmer, uncovered, stirring occasionally, about 5 minutes or until lightly browned
- Remove from heat, stir in cream and remaining ingredients.
- Beat butter, sugar and egg yolk in small bowl until smooth. Stir in the sifted flour.
- Press in the mixture over the greased rectangular slice pan and spread with filling.
- Bake in moderately hot oven about 20 minutes or until filling is set and lightly browned.
- Spread filling with topping; cool. Refrigerate slice until topping is set before cutting.
- Dip base and sides of rectangles in combined chocolate and oil; place, chocolate side up, on wire racks until set.

- 100 grams plain cake crumbs

- 120 grams butter, chopped
- 100 grams castor sugar
- 2 tablespoons cream
- 150 grams flaked almonds
- 50 grams sultanas, coarsely chopped
- 2 tablespoons coarsely chopped glace cherries
