Preparation Method :
- Beat butter, caster sugar and almond paste in small bowl until smooth, add yolks and rum, beat until combined. Stir in sifted flour.
- Spoon mixture into piping bag fitted with medium fluted tube. Pipe rounds into greased bases of 4 x 6 hole shallow patty pans.
- Smooth mixture with spatula. Pipe the mixture around edges of bases.
- Bake in moderately hot oven about 10 - 12 minutes or until lightly browned; cool on wire racks.
- Dust with sifted icing sugar, spoon jam and lemon butter into centres.

- 2 teaspoons dark rum
- 250 grams plain flour icing sugar mixture
- 2 tablespoons strawberry jam
- 2 tablespoons lemon butter
- 2 egg yolks
