ALMOND PETITS FOURS

Makes :
25 Pieces

Preparation Time :
30 minutes

Cooking Time :
12 minutes

Preparation Method :

  • Beat butter, caster sugar and almond paste in small bowl until smooth, add yolks and rum, beat until combined. Stir in sifted flour.
  • Spoon mixture into piping bag fitted with medium fluted tube. Pipe rounds into greased bases of 4 x 6 hole shallow patty pans.
  • Smooth mixture with spatula. Pipe the mixture around edges of bases.
  • Bake in moderately hot oven about 10 - 12 minutes or until lightly browned; cool on wire racks.
  • Dust with sifted icing sugar, spoon jam and lemon butter into centres.

INGREDIENTS

  • 75 grams castor sugar
  • 3 tablespoon almond paste
  • 200 grams butter
  • 2 teaspoons dark rum
  • 250 grams plain flour icing sugar mixture
  • 2 tablespoons strawberry jam
  • 2 tablespoons lemon butter
  • 2 egg yolks
