VEGETABLE BURGERS WITH COLE SLAW

Preparation Method :
- Mix the vinegar with salt and sugar in a small bowl. Soak the cucumber slices in the vinegar mix and keep it aside.
- Prepare cole slaw by mixing mayonnaise and fresh cream in a large bowl.
- Mix finely shredded cabbage and carrot. Add in the lemon juice with salt and pepper.
- Cook the carrots and beans for about 5 - 7 minutes or until the water dries.
- Remove from fire, allow to stand for about 5 minutes and mash the hot vegetables.
- Heat 1 tablespoon butter in a pan. Add chopped onion and fry till transparent.
- Add carrots and beans with all the spices. Cook for about 5 minutes, when boiled add in the grated potatoes. Remove from fire.
- Add crumbled bread. Adjust seasoning. Shape into tikkis and shallow fry till brown and crisp.
- Assemble: Cut the buns into half, sauté in the pan with little butter. Keep pressing the buns till soft. Remove from pan.
- Spread a little mustard paste on the lower portion of the bun.
- Arrange a lettuce leaf. Place a hot tikki on it and then spread some cole slaw.
- Followed by a slice of pickled cucumber, onion and tomato. Sprinkle salt and pepper.
- Cover with the other piece of bun, tilting it slightly such that the filling shows. Fix a tooth pick if desired.

- 3 tablespoon mayonnaise
- 1 tablespoon fresh cream or malai well beaten
- 50 grams very finely shredded cabbage
- ½ carrot - grated
- Few drops lemon juice,
- Salt and pepper to taste
Tikki
- 250 grams potatoes - boiled and grated
- 2 small carrots - chopped
- 10-12 french beans - cut into small cubes
- 3 bread slices - sides removed and crumbled
- 1 onion - finely chopped
- 1 tablespoon butter
- 1 tablespoon mustard paste
- ½ teaspoon amchur
- ½ teaspoon garam masala
- Salt to taste
- ½ teaspoon red chilli powder
