VEGETABLE BURGERS WITH COLE SLAW

Preparation Method :

  • Mix the vinegar with salt and sugar in a small bowl. Soak the cucumber slices in the vinegar mix and keep it aside.
  • Prepare cole slaw by mixing mayonnaise and fresh cream in a large bowl.
  • Mix finely shredded cabbage and carrot. Add in the lemon juice with salt and pepper.
  • Cook the carrots and beans for about 5 - 7 minutes or until the water dries.
  • Remove from fire, allow to stand for about 5 minutes and mash the hot vegetables.
  • Heat 1 tablespoon butter in a pan. Add chopped onion and fry till transparent.
  • Add carrots and beans with all the spices. Cook for about 5 minutes, when boiled add in the grated potatoes. Remove from fire.
  • Add crumbled bread. Adjust seasoning. Shape into tikkis and shallow fry till brown and crisp.
  • Assemble: Cut the buns into half, sauté in the pan with little butter. Keep pressing the buns till soft. Remove from pan.
  • Spread a little mustard paste on the lower portion of the bun.
  • Arrange a lettuce leaf. Place a hot tikki on it and then spread some cole slaw.
  • Followed by a slice of pickled cucumber, onion and tomato. Sprinkle salt and pepper.
  • Cover with the other piece of bun, tilting it slightly such that the filling shows. Fix a tooth pick if desired.

INGREDIENTS

  • 50 ml white vinegar mixed with
  • ½ teaspoon sugar
  • ½ teaspoon salt
  • Few onion and tomato cut into very thin slices
  • 6 fresh burger buns
  • A few lettuce or cabbage leaves - hard stem removed and 
  • torn roughly into two
  • 1 small cucumber - cut into slices without peeling

Cole Slaw

  • 3 tablespoon mayonnaise
  • 1 tablespoon fresh cream or malai well beaten
  • 50 grams very finely shredded cabbage
  • ½ carrot - grated
  • Few drops lemon juice,
  • Salt and pepper to taste

Tikki

  • 250 grams potatoes - boiled and grated
  • 2 small carrots - chopped
  • 10-12 french beans - cut into small cubes
  • 3 bread slices - sides removed and crumbled
  • 1 onion - finely chopped
  • 1 tablespoon butter
  • 1 tablespoon mustard paste
  • ½ teaspoon amchur
  • ½ teaspoon garam masala
  • Salt to taste
  • ½ teaspoon red chilli powder
