THE DELICIOUS BISCUIT

Preparation Method :

  • Custard filling: Beat butter and essence in small bowl until as white as possible; beat in sifted icing sugar. Beat in spoonfuls of custard mixture; beat until smooth.
  • Biscuit Dough: Sift flour into medium bowl, add almonds, rub in butter. Add yolk and essence; mix to a firm dough.
  • Knead gently on lightly floured surface until smooth, cover; refrigerate 30 minutes.
  • Praline: Place nuts on greased oven tray. Combine sugar and water in small pan, stir over heat, without boiling, until sugar is dissolved.
  • Bring to boil, simmer, uncovered, without stirring, until golden brown. Pour sugar mixture over nuts; leave until set. Break praline into pieces, process until finely crushed.
  • Roll biscuit dough between sheets of baking paper; cut into small rounds, place on greased oven trays.
  • Bake in moderate oven about 10 - 12 minutes or until lightly browned; cool on trays.
  • Combine caster sugar and flour in a small pan, Stir in the yolk and milk mixture, whisk until smooth. Stir over heat until mixture boils and thickens.
  • Cover the surface of the custard mixture with plastic wrap, cool.
  • Sandwich the biscuits with filling . Spread a little filling around edges of joined biscuits, roll edges in praline mixture. Dust with a little extra sifted icing sugar.

  • 3 tablespoon butter
  • 2 tablespoons caster sugar
  • 2 tablespoons plain flour
  • 100 ml milk
  • 1 teaspoon vanilla essence
  • 25 grams icing sugar mixture
  • 1 egg yolk

Biscuit Dough

  • 150 grams plain flour
  • 100 grams packaged ground almonds
  • 100 grams butter, chopped
  • 1 egg yolk
  • 1 teaspoon vanilla essence

Praline

  • 25 grams slivered almonds
  • 50 grams caster sugar
  • 50 ml water
