SULTANA BISCUITS

Preparation Method :

  • Beat butter, rind and sugar in small bowl with electric mixer until smooth, add egg, beat until combined.
  • Stir in sifted flour and soda, sour cream and sultanas. Toss rounded teaspoons of mixture into coconut; roll into balls, place on greased oven trays; flatten slightly.
  • Bake in moderate oven about 15 minutes or until lightly browned; cool on trays.

INGREDIENTS

  • 250 grams caster sugar
  • 250 grams plain flour
  • 100 grams shredded coconut
  • 50 grams butter
  • 2 teaspoons grated lemon rind
  • ½ teaspoon baking soda
  • 150 ml sour cream
  • 75 grams sultanas
  • 1 egg, lightly beaten
