POLENTA AND ALMOND BISCUITS

Preparation Method :

  • Preheat the oven to 190°C / 375°F / Gas Mark 5.
  • Mix the polenta, flour, baking powder and sugar in a large bowl, add in the softened butter with the almond essence and egg yolk to form soft dough.
  • Wrap the dough in clingfilm and refrigerate for about 20-30 minutes.
  • Roll out the dough on a lightly floured surface to a thickness of 3 inch, cut the dough into biscuits using the cutter.
  • Transfer the biscuits to a baking sheet, covered in baking parchment and sprinkle over the flaked almonds. Bake for 5 minutes or until golden. Cool on a wire rack.

INGREDIENTS

  • 100 grams polenta 
  • 50 grams plain flour 
  • 100 grams icing sugar 
  • 50 grams butter 
  • 1 teaspoon baking powder
  • 1 teaspoon almond essence 
  • 1 egg yolk
  • 30 grams flaked almonds
