PASSION FRUIT CREAM BISCUITS

Preparation Method :

  • Passion fruit Cream: Beat butter and sifted sugar in small bowl until light and fluffy. Stir in passion fruit pulp and brandy.
  • Beat butter, rind, sugar and golden syrup in small bowl until smooth. Stir in sifted dry ingredients, glace ginger and enough pulp to mix to a soft dough.
  • Knead gently on lightly floured surface until smooth. Roll dough between sheets of baking paper.
  • Cut into rounds with cookie cutter, place on greased oven trays. Bake in moderate oven about 10 minutes or until lightly browned. Cool on wire racks.
  • Sandwich biscuits with passion fruit cream, dust with sifted icing sugar.

INGREDIENTS

  • 150 grams butter
  • 1 teaspoon grated lemon rind
  • 75 grams caster sugar
  • 2 tablespoons golden syrup
  • 150 grams self-raising flour
  • 100 grams plain flour
  • ½ teaspoon ground ginger
  • 2 tablespoons finely chopped glace ginger
  • 2 tablespoons passion fruit pulp

Passion Fruit Cream

  • 50 grams butter
  • 100 grams icing sugar mixture
  • 1 tablespoon passion fruit pulp
  • 2 teaspoons brandy
